Three days for one croissant.

Real viennoiserie can't be rushed. Our dough rests overnight, then we laminate French cultured butter through it across three folds — twenty-seven delicate layers in all. The result is the shell that shatters and the honeycomb interior that only time can build.

Every morning, in small batches, our bakers shape and bake fresh — so what you taste left the oven an hour ago, not yesterday.
