Our Executive Chef leads the kitchen at One Day in Paris with classic French technique and a deep respect for the ingredient. Trained in the traditions of the French table and seasoned across acclaimed kitchens, Rémi cooks the bistro classics the honest way — precise, generous, and never fussy.

His philosophy is simple: source beautifully, cook with intention, and send out food that makes people want to stay a little longer. It's the heartbeat behind every plate that leaves our pass.
